Thanks, but the Outlook app is working fine, I can see all of my Contacts and Appointments in it.

That doesn't preclude you also seeing then in the native Android Calendar and Contacts apps too, though and I can see my contacts there, but not my Appointments. I am also having a similar issue as of late. I was hoping Oreo might fix things. Oh woe.
Troubleshoot Contacts and Calendar sync between Android and Exchange
Its unfortunate that even with Microsoft apps, they can still behave so unpredictably. On the Manage Calendar screen, there should be an Add account option. Tap on that option and add an account depending on the type of the account you want to add. If the type account you want to add is not available on the list, this might be a limitation of the native calendar app.

I have the native Android Calendar app syncing with both of my Outlook. On the same screen as Settings, Calendars to Display , make sure your Outlook. On the same screen as Settings, Calendars to Sync , make sure the Outlook Calendar you've set to display is also set to sync. The same password you used to access your email before migration Exchange Server: Tap Next 7.
If you do, just tap OK to dismiss it. Next you should see the Account settings screen. The options available depend on the version of Android on your device and may include the following: Email checking frequency: The default value is Automatic push. When you select this option, e-mail messages will be sent to your phone as they arrive in your mailbox. We recommend only selecting this option if you have an unlimited data plan.
Days to sync: This is the amount of mail you want to keep on your mobile phone. You can choose from several length options, including one day, three days, and one week.
Correct account type
Sync contacts from this account: If you select this option, your contacts will be synchronized between your phone and your Exchange account. Tap Next and enter a name for this account, then tap Done to complete setup. Want more information? Tap Next.
